
Olivier ROELLINGER
Starred chef in Cancale
Olivier Roellinger was born on September 14, 1955 in Cancale, Brittany. In 1982, after a serious accident, he decided to create a table d'hôte in his family home, the "Maison de Bricourt" in Cancale. Six months later, he was awarded two toques and a 15/20 in the Millau In 1984, he obtained his first star in the Michelin guide and, in 1988, he obtained his second. It wasn't until 2006 that he was promoted to the third star. His cuisine combines local ingredients and spices, recalling the historical link between the port of Saint-Malo and the route to India. The dish that made his reputation is the "return from India" St. Pierre.
