From his native land of Argentina to the French Riviera, the path was passionate. But above all it has been a path strewn with travel, discovery, ambition, and hard work that has brought him to the peak of his art. His boldness and vision reflect his cuisine that transcends the seasons and his region. Always Mediterranean, it is instinctive and generous.

Convinced of the benefits of short circuits and strengthened by the ties he has forged with the nature that surrounds him, Chef Mauro Colagreco is committed to and promotes a circular Gastronomy with the greatest respect for the cycles of nature. A responsible and unusual chef, he has broken the codes and fights relentlessly to participate in the environmental transition. A chef without borders, constantly on the move, he strives for excellence in all its simplicity.

Settled in Menton since 2006 with his family, the chef Mauro Colagreco has built the Mirazur. Much more than a restaurant, Mirazur is a Mediterranean estate, a place to live, a way of thinking and living with nature as its only focus. In 2019, the supreme awards of 3 stars in the Michelin Guide and the first place in the world ranking The World's 50 Best Restaurants, only confirmed his incredible virtuosity. In 2020, Mauro Colagreco is the first to obtain the "Plastic Free" certification for the Mirazur restaurant.

Today, always on the move and with the insane desire to continue learning and moving forward, he pursues his dreams to put the concerns of our Earth back at the center of his creations.

At Mirazur, Mauro Colagreco develops a cuisine guided and inspired by nature and his love for the region that he continues to discover a little more each day. It's a plant-based and evolving cuisine, which follows the 365 seasons and the cycles of the moon.
